Lead Utility Steward responsible for maintaining the cleanliness of the kitchen, equipment, and back of house work area. Sets the standard for the team by demonstrating culinary excellence and accountability.
Requirements
- Maintains cleanliness and sanitation of kitchen, equipment, supplies, pots/pans, small wares, china, glass, and silver
- Leads a team in maintaining cleanliness and sanitation of equipment, supplies
- Cleans kitchen floors following standard procedures
- Applies knowledge of safe use and storage of chemicals and equipment
- Maintains and records data on required logs per company policies and procedures
- Completes daily and weekly cleaning assignments per task lists
- Regularly empties trash containers; shifts and cleans garbage cans; properly operates compactor
- Minimizes loss and breakage through proper use, cleaning and storage of equipment and supplies
- Performs duties in a timely and efficient manner and on a schedule determined by kitchen and dining operations
