The Manager, Culinary Services/Executive Chef is responsible for the effective management of the Food Services Department at The Waterford, a retirement living residence in Tsawwassen. Responsibilities include menu planning, budget preparation and management, supervising culinary and serving staff, and participating in meal preparation.
Requirements
- Develops, implements, controls and evaluates departmental systems, goals, objectives, policies and procedures in a timely manner
- Adapts to the changing needs of the residents and embraces the BriaCuisineTM program
- Maintains departmental budget control by implementing the management policies and procedures of purchasing, ordering, stock and inventory control
- Interviews and hires qualified personnel and provides orientation of new employees
- Motivates and evaluates employee performance and recommends plans for employee development / improvement
- Prepares and cooks meals, tests food items for palatability and temperature, and ensures safety and hygiene practices
- Conducts staff in-service and attends approved work-related conferences and seminars
- Maintains a current knowledge of, and complies with, all company policies and procedures
