The Domaine du Mas de Pierre is a 5* hotel looking for a Second Executive to oversee its restaurant poles and culinary excellence. The ideal candidate will have experience in high-end or gastronomic establishments and possess leadership skills, organizational abilities, and attention to detail.
Requirements
- Global management & organization
- Supervise the entire kitchens of the Domain (gastronomic, bistro, lagoon, room service, breakfast, banquets)
- Coordinate the kitchen teams on all sales points
- Ensure the fluidity of operations and the optimization of resources
- Be the guarantor of continuity of service and quality of productions
- Participate actively in production according to operational needs
- Guarantee the quality, regularity, and presentation of dishes on all restaurants
- Ensure the respect of the culinary identity proper to each concept
- Be a source of proposals in the evolution of menus and cards in collaboration with the Executive Chef
- Supervise orders, reception, and storage of merchandise
- Control ratios, material costs, and yields
- Participate in the elaboration of restaurant budgets
- Optimize processes to ensure performance and profitability
- Lead, federate, and motivate the kitchen teams
- Accompany the rise in skills of employees
- Ensure the transmission of expertise and standards of the House
- Be a permanent relay between the field teams and the Executive Chef
- Replace the Executive Chef in their absence on the entire restaurant perimeter
- Apply and make apply strictly the HACCP standards
- Guarantee the cleanliness of working spaces and equipment
